While this didn't work very well on Hulk in his Worldbreaker form during World War Hulk because of how angry he was, it would work in normal circumstances. A soothed Hulk isn't going to get madder, meaning he isn't going to get stronger and Sentry's massive strength, durability, and other powers will allow him to take the Hulk down.
